Totally depends on your use case. Would I run a company off of one no. do I use one for my home VPN server yes. It boils down to two things, performance and uptime. For my use cases (1-2 users) the pi has been totally fine. It hasn’t gone down on me yet. But at the same time if it went down and I couldn’t connect back to my house it would mostly be an annoyance
It depends on your speed/performance/users, etc.

Is a raspberry fine for 30Mbps and 1 user? sure, yes. Is it okay for 1Gbps and 10 users? maybe not.
Depends what you use it for? If it’s only you using it it should be just fine as an OpenVPN server!
