Different services are different, but they all need some way to control for users who do things like DDOS or spam or use excessive bandwidth, or their server will get blacklisted by every site on the net and be useless. I know some (probably all) enable logs to track these users and ban them. They also enable logs to track and resolve bugs, and they will have aggregate logs of bandwidth to be able to balance server loads and other infrastructure things.
Realistically, a VPN will *never* provide total privacy. TOR is for that. Buying a second hand burner phone and sim card with cash and using them while away from your home is probably the only other option. Anyone saying anything else is lying to you. All a VPN accomplishes is dodging the bullshit your ISP will pull on you (DMCAs, website blocking, harvesting your data, not making it super totally easy to be tracked by law enforcement). If you get anything above that, consider yourself lucky.
Use https and all anyone can get from a vpn is the domains you access, timestamps, and bandwidth. That’s the best you can hope for.
EDIT Also, disable cookies or don’t log in to your fucking google accounts on your vpn.
Most of them do not log what you are doing, but they do know when you are connected, and how long you are connected, some of them also log the bandwidth, so, when there is a problem, (police asked them about an ip, and a time) they can most probably find the ip who is behind it. But as they say, they do not log user activity.. Kind of like that if Im not totally mistaken 🙂
