If they own the servers then they have ultimate control. If they give you information about what they do and do not log and you trust them then you know.
If they do not own the servers then you should ask the company what their arrangement is. Maybe they do actually have ultimate control of the hardware and sole access to what’s running on it – in which case same as above. If the host *does* have access to the data then who knows what is going on with it.
